PRÉSENTATION
Le sucre d’érable est produit directement à partir du sirop d’érable que l’on fait chauffer pour le déshydrater. Le cristal de sucre obtenu est ensuite concassé sous la forme de petites pépites de 1 à 2 mm de diamètre.
Tout comme le sirop d’érable, il est fabriqué dans les forêts du nord-est de l’Amérique du Nord et en particulier au Québec. Sans utilisation d’additifs, de colorants ou de conservateurs.
Le sucre d’érable est non raffiné de sorte à préserver ses qualités nutritionnelles.
Sa saveur est bien évidemment sucrée, mais surtout, rappelle inévitablement le classique sirop d’érable, offrant de notes prononcées de caramel, de sève avant de laisser en bouche place à des notes plus légères de réglisse et de miel.
Possédant un indice glycémique relativement faible (54), très inférieur à celui du sucre de betterave ou de canne (70), tout en ayant un pouvoir sucrant 1,4 fois plus important et de fait nécessite d’être utilisé en plus petite quantité.
